4 cups shredded lettuce 1 medium papaya peeled, seeded and diced 1 medium avocado, peeled, seeded and diced
1 small red onion, sliced and separated into rings 2 medium tomatoes, quartered 2 tbsp. oil 2
to 4 tbsp. Eclipse Jamaican Jerk Sauce 1 lb. boneless pork loin cut into thin 3' strips Place lettuce on
serving platter. Arrange papaya, avocado, and onion over lettuce. Heat oil in large skillet or wok; add Eclipse Jamaican
Jerk Sauce and mix well. Add pork strips and saute over medium heat for 5 to 7 minutes until pork is completely
cooked but still tender. Spoon hot pork strips and sauce over lettuce as a dressing and serve immediately. Note:
Chicken, beef, lamb, shrimp or scallops may be substituted for the pork if desired. Serves 4.
